You can go into Notification settings and disable notifications from Google Maps?
Or, if sometimes you don't want the notification to show I think you can just press a button when the watch is showing the directions and it'll just mark it as read and go back to the message list, and then directions will no longer be shown unless you explicitly go to the messages app and tap on the Navigation message?
