That's an interesting thought - I guess it'd give you much better control of the system, and actually with the ESP8266's extra flash memory you could store HTML/etc in there if needed.
The F0 seems to be 5v tolerant on all pins apart from the analog inputs, so you still have to be careful with what you connect where!
