The reasoning is why do you want to uninstall an app, unless it is in the process of installing another - in which case the App Store is by far the easiest option for uninstallation.
It's also super-easy to stop your watch working by uninstalling the launcher or clock for instance - if you're not connected to the app loader there's no way to install them - so it seems like a dangerous thing to offer by default
I think the only drawback right now might be that I'm not sure the uninstaller is aware of 'data' files - like GPS tracks/etc - so wouldn't remove them.
