I am thinking about the same.
It is possible to run Gadgetbridge Android via Waydroid on mobile Linux but Waydroid does not (yet) has acceess to Bluetooth devices therefore this does not help.I found this tool very promising:

Is there a way to run gadgetbridge on plasma mobile? It seems like it MIGHT be possible via anbridge but I think it'd be really slow.
Any similar ways to connect the devices (pinephone running plasma mobile + banglejs) together, or suggestions for projects to follow?
pushbullet + kdeconnect maybe?
Mostly interested in connecting the devices for health logging purposes and maybe a couple of other things curious if there's a neat way to do it without overcomplicating stuff.
